Spicy Chickpea Stew
A hearty and warming stew of chickpeas simmered in a tomato-spiced broth.

Ingredients

- - 2 tbsp olive oil
- - 1 onion diced
- - 2 cloves garlic minced
- - 1 tbsp tomato paste
- - 1 tsp ground cumin
- - 1 tsp smoked paprika
- - 15 oz chickpeas drained
- - 2 cups vegetable broth
- - 14 oz diced tomatoes
- - Salt and pepper to taste
- - Chopped cilantro for garnish
Instructions
- Heat olive oil in the Dutch oven over medium heat.
- Sauté diced onion and minced garlic until translucent, about 5 minutes.
- Stir in tomato paste, ground cumin, and smoked paprika; cook for 1 minute.
- Add chickpeas, vegetable broth, and diced tomatoes. Bring to a simmer.
- Reduce heat and cook, uncovered, for 20 minutes.
- Season with salt and pepper. Let stew rest for 10 minutes.
- Garnish with chopped cilantro before serving.
