Spicy Chickpea Stew

A hearty and warming stew of chickpeas simmered in a tomato-spiced broth.

- 1x Dutch oven (Heavy-bottomed pot for even heat distribution)
Ingredients
Ingredients:
- 2 tbsp olive oil
- 1 onion
diced
- 2 cloves garlic
minced
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 15 oz chickpeas
drained
- 2 cups vegetable broth
- 14 oz diced tomatoes
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
Heat olive oil in the Dutch oven over medium heat.
Sauté diced onion and minced garlic until translucent, about 5 minutes.
Stir in tomato paste, ground cumin, and smoked paprika; cook for 1 minute.
Add chickpeas, vegetable broth, and diced tomatoes. Bring to a simmer.
Reduce heat and cook, uncovered, for 20 minutes.
Season with salt and pepper. Let stew rest for 10 minutes.
Garnish with chopped cilantro before serving.
